Description
This lot is named after the lively sparrows that live in the farm. There are many regions in Yunnan that produce good coffee, but we found Guatemala has always distinguished itself when cupping alongside other regions.
These coffee cherries were fermented for two days before being laid to dry inside a solar dryer on raised beds for 20 days. This process creates a bright acidity and layered flavour profile. Our Head of Coffee, Freda calls it a ‘fruit bomb’.
