Roasters’ Notes:

We lay the foundation for this profile with a lofty charge temperature – high-grown Peruvians are big beans that are notably resistant to heat. We maintain high gas throughout the greater part of the ramp-up before first crack. A lengthened development accentuates the inherent sweetness of this coffee, maximising caramelisation, but with a deliberately low rate of rise entering into first crack to maintain a clean cup profile.

Description

Once the cherries were selectively picked, this particular peaberry lot was anaerobically fermented before being patio-dried for 20 days. The choice to introduce this controlled anaerobic fermentation to this natural process brings about wonderful tropical fruit complexity, while maintaining more classic attributes expected from Brazilians such as lower acidity and a fuller body.
